Ingredients

  • Refined flour (maida) 1½ cups
  • Sugar ¼ cup
  • Brown sugar ¼ cup
  • Baking powder 1½ tsp
  • Baking soda ½ tsp
  • Cinnamon (dalchini) powder ½ tsp
  • Ginger, finely chopped ¼ tsp
  • Mace (javitri) ¼ tsp
  • Almonds and walnuts, finely chopped ¾ cup
  • Salt ¼ tsp
  • Buttermilk 1 cup
  • Eggs 2
  • Melted butter 2 tbsps

How to Make Carioca Spice Muffins (Stepwise Photos)

Method

  1. Preheat oven to 200º C.
  2. Take refined flour, sugar, brown sugar, baking powder, soda, cinnamon powder, ginger, mace, almonds, walnuts and salt in a bowl and mix well.
  3. Take buttermilk, eggs and butter in another bowl and whisk well.
  4. Make a well in the middle of the dry mixture and pour the wet mixture into it, a little at a time, and whisk to make a thick batter.
  5. Grease steel bowls with butter and line them with butter paper. Arrange the bowls on a baking tray. Fill 2 tbsps batter in each bowl.
  6. Keep the baking tray in the preheated oven and bake for 20 minutes. To check when it is done, insert a toothpick which should come out clean.
  7. Take the tray out of the oven and let the muffins cool a little.
  8. Demould, arrange them in a serving platter and serve.
