Whisk together butter,
castor sugar, egg and vanilla essence in a mixing bowl. Fold in refined flour and baking powder and chocolate chips. Roll into a dough and set aside to rest for 10-15 minutes.
Preheat oven to
180º C. Line a baking tray with butter paper.

Dust dough with
refined flour and also sprinkle it on the work top. Roll the dough into ¼ cm thickness and cut into round cookies with a round cookie cutter.
Place them on the
baking tray and bake in the preheated oven for 20-25 minutes.
Remove the tray from
the oven, cool down to room temperature, arrange on a serving platter and serve.
