Carrots, peeled and chopped 450 gms
Real Orange Juice 1 cup
Butter 3 tbsps
Medium onion, finely chopped 1

Heat butter in a non-stick pan, add onions and sauté till soft.
Add carrots, vegetable stock and salt, mix well and simmer till the carrots turn soft. Remove from heat, cool and puree in a blender.

Vegetable stock 2 cups
Salt to taste
Lemon juice to taste
Fresh coriander leaves, chopped to garnish

How to Make Carrot and Orange Soup (Stepwise Photos)

Method

Heat butter in a non-stick pan, add onions and sauté till soft.
Add carrots, vegetable stock and salt, mix well and simmer till the carrots turn soft. Remove from heat, cool and puree in a blender.
Transfer puree back into the pan and add Real Orange Juice. Mix well, adjust salt and add lemon juice and mix well.
Transfer into a serving bowls, garnish with coriander leaves and serve warm or chilled.
